Having something protein-rich is the best meal to start the day with, if you do prefer to eat breakfast. It keeps you full longer, reduces cravings and keeps your blood sugar stable.
This dish (if you can call it that) is the easiest thing to put together and is very versatile. No cooking needed.
The base is cottage cheese, which has 14g of protein per 1/2 cup. Adding a couple of spoons of hemp hearts adds another 10g of protein. Together, they take care of ~1/3rd of your protein requirements for the day.
I love adding berries for their sweetness and tang. And for the chock full of anti-oxidants and polyphenols. You can use whatever fruit is in season.
And some nuts for their crunch and good fats.
Here, I have also added some homemade spice powder for the kick.
This satisfies my palate with all the flavors - salty, sweet, tangy, spice.
And makes for a healthy, tasty snack as well.
My daughter loves a slightly different version - with some vanilla extract and a tsp of honey or maple syrup instead of the spice powder. It's one of her favorite breakfasts!
Ingredients:
1/2 cup organic or low-fat cottage cheese
2 tbsp hemp hearts
6-8 pieces of pecans, chopped
1/4 cup blueberries
4 strawberries, quartered
1 tbsp, spiced lentil powder
Add everything to a bowl. Mix and enjoy!!
